Allergen Control & Regulations
Course Content:
Allergens are present in foods both as added ingredients and inadvertently–for example, through cross contamination, improper handling or inadequate sanitation measures. This course provides guidance on how to best manage and control allergens within your supply chain, from supplier approval to shipment of finished product. You will also learn about the new allergen labelling regulations that become law in August 2012, and how they will affect your business.

What are allergens? - How prevalent are they? - What are their health effects?
♦ Allergen classes:
Examining the different classes of allergens - Direct and indirect sources of allergens
♦ Allergen handling & control methods:
Steps involved in effective allergen control - Role of ingredient suppliers in reducing allergenic risk - GMP/Personnel practices for handling allergens - Allergen segregation and labelling - Role of production planning and sanitation in allergen control - Sanitation verification methods.
♦ Allergen labelling & regulations: 
Current and upcoming regulations - Exemptions - Use of “contains” and “may contain” statements
On completion of the course, participants will better understand how to control the allergen risk in their facility.

Cost: $130 + HST per participant

Substitutions, Cancellations & Refunds
Substitutions (one attendee registers but another attends): please let us know as soon as possible.
Early Cancellation (more than five days prior to the event): 75% of the fee is refunded, with 25% being retained as an administration fee.
Late Cancellation (less than five days prior to the event): no refund.
